- Confirm the headcount and dietary needs. Ask directly instead of guessing.
- Read every recipe once. Mark oven temperatures and anything that must rest, chill or come to room temperature.
- Assign serving pieces. Put a small note in each empty bowl or platter so nothing is forgotten.
- Set up drinks separately. Keep glasses, water and opening tools away from the cooking area.
- Prepare one clear landing space. Guests, groceries and hot dishes all need somewhere to arrive.
- Choose what will not be perfect. A simpler dessert or an unpolished table is better than a host who misses the evening.
The two-hour rule
Two hours before guests arrive, stop adding tasks. From that point, finish only what is already planned, clear the sink and get yourself ready.
A useful table is enough: everyone needs a comfortable seat, a glass, the necessary utensils and room for shared dishes.
